Have you ever watched your barista pour a small amount of water over fresh coffee grounds and wait? That magical moment where the coffee "puffs up" isn't just for show—it’s the secret to a perfect cup. At SUR Coffee, we call this the bloom.  


What is the Coffee Bloom?


The "bloom" is the rapid release of carbon dioxide (CO2) gas that happens when hot water first touches fresh coffee grounds. As the gas escapes, the grounds expand and bubble, creating a foam-like appearance.  


The Science Behind the Bubble

When coffee is roasted, CO2 is trapped inside the beans. If you don't let this gas escape before you finish brewing, it can repel water and prevent it from fully extracting the coffee’s oils and flavors. By pausing for 30 seconds to let the coffee bloom, you’re clearing the way for the water to do its job, resulting in a cleaner, more vibrant cup.  


Why Freshness Matters for a Great Bloom


You’ll only see a vigorous bloom with fresh coffee. As beans sit on a shelf, they naturally lose their CO2. If your coffee doesn't bubble when you pour, it’s a sign the beans might be past their prime. At our San Clemente roastery, we roast daily to ensure that every bag of SUR Coffee arrives at your door ready to bloom.


How to Master the Bloom at Home

  1. Use Fresh Beans: Start with high-quality, freshly roasted beans like our Gaviota House Blend or Dawn Patrol.

  2. The First Pour: Gently pour just enough water (about double the weight of the coffee) to saturate all the grounds.  

  3. The 30-Second Rule: Wait about 30 seconds. Watch the bubbles and enjoy the aroma—this is the "art" part!

  4. Finish the Pour: Once the bubbling slows down, continue your pour as usual.

Why is my coffee not blooming?

It usually means the beans aren't fresh. Freshly roasted coffee contains more CO2, which is necessary for the blooming process.
